Serve as a side course with grilled fish, chicken or steak.
DIRECTIONS
Wash bok choy and snow peas and dry well.
Slice bok choy into bite size chunks.
Snap ends off of snow peas.
Rinse mushrooms and cut a thin slice off the bottom, slice in half.
Peel shallots and cut in quarters.
Lightly coat frying pan with olive oil, add bok choy and sauté until slightly wilted (3-4 minutes), add chopped garlic and sauté for an additional minute. Remove from frying pan into a serving dish.
Add mushrooms and shallots to the frying pan and sauté until soft (4-5 minutes). Add snow peas for an additional minute.
Mix mushrooms, shallots and snow peas with the bok choy and garlic.
Season with salt and pepper to taste.
Serve warm.
