Pesto Marinated Chicken Thighs. Either make your own pesto, I make mine with just basil leaves, garlic, fresh lemon juice, salt and pepper, and olive oil, or buy some ready made pesto. Pour pesto into a ziplock bag. Add skinless, boneless chicken thighs and let marinate for at least 30 minutes. Pre-heat a grill pan on high and cook for about 5-6 minutes on each side. You can also throw on the grill. Great for Passover and all year round!
